KEEWAI fresh water crayfish are many things and for a chef like myself the fact that they are always so fresh and clean tasting makes them very appealing and versatile. I am very excited at the high quality product and the professionalism of this business gives me confidence in the sustainability and longevity. A few of my favourite ways to cook them is to simply plunge them into boiling water, served with butter, sea salt and lemon or barbecued and brushed with a fragrant fresh chilli, parsley oil.
